A healthier alternative to mac and cheese

One of our weak points is mac and cheese. The boxed kind. Totally processed, fatty and just lacking in goodness.

I made an alternative cheesy pasta for lunch today which the kids LOVED!

CAULIFLOWER CHEESE PASTA



INGREDIENTS -
1 bag frozen cauliflower (or fresh if you prefer)
1 8 oz package cream cheese
1 box whole wheat rotini pasta
a splash of milk (maybe 3 tbsp? ish)
1 tbsp ranch dressing
2-3 tbsp shredded cheese
salt and pepper to taste

Set a pan of water to boil for the pasta. When it boils, add the pasta and cook according to package, to al dente.

Cook the caulflower until just soft, with some crunch - I nuked mine for speed.

Puree the cooked cauliflower with a food processor or hand blender.

Place pureed caulflower in a skillet.

Add softened cream cheese, and mix together.


Add remaing ingredients to sauce and mix until well blended. Keep it on low while the pasta finishes cooking.

Drain the pasta, put it on plates and pour the sauce over the top.


The kids were full of "Mmmmmmmm"s and Kaya said "This is great mum! Can you make it again sometime? Maybe tonight for supper?"

Zoe loved it too. She wolfed down a large portion then requested more and finished it too!
